In my 8 years of development experience, I haven't come across a scenario where I had to use this and I did very well delivering enterprise grade applications I have learnt about it after the interview but can't see why someone would want to use it instead of override. It is also discouraged to use shadowing and it is against SOLID principles. This is irrelevant to today's world and only made it clear that the interviewer wanted his moment of glory. After that, it's just a matter of not working in such self-centred teams.
